It's odd to us, but this kind of stuff is still part of the Chinese diet but is not a staple anymore, rather a delicasy.
It's like some people eat ojri (intenstines) or Brains or hoofs of goats and sheep. Nobody really needs to eat them but people still do because they did in the past.
All these foods come from times of drought and famine, when people would eat anything available.

I saw an interesting programme, Paul Merton in China and he was told there by a Chinese lady, that the food including insects etc are famine food.

you gotto hand it to the chinese. gold medal for bravery.
I knew this lady from hongkong. She had some kind of medicinal delicacy worth thousands of dollars for a handful of dried substance thats prepared as soup. I asked what it is. She said bird spit. I thought I heard wrong or she was joking. She seriously said bird spit soup. I couldnt believe my ears. They dont find it strange. I still cant believe it.

im sorry.. i dont mean to come off sounding culturally insensitive... but that was just disgusting!
i can never imagine sitting with my family (parents & grand parents) & eating this..
